Also known as Mugi Miso, this is the traditional miso of rural Japan. This superb miso is made using traditional methods and aged entirely in cedarwood barrels for 1-2 years. It adds rich flavor and concentrated goodness to sauces, baked dishes, soups, and beans. It also makes an excellent miso soup. Vegan.
